Ingredients  

  1. Grease the bottom of a large saucepan with butter
  2. Add broccoli and sprinkle with salt
  3. Mix broth and bring to the boil
  4. Reduce heat to medium-low and cook until you can stick a fork in the broccoli
  5. Now pour in a cup of water and let it boil again
  6. Add cheese, sour cream and sprinkle with pepper
  7. Boil for 2-3 minutes, stirring continuously.
  8. Finally, pour in the heavy cream (if desired) and bring it to a boil
  9. Remove from the heat and let it rest a bit
  10. Transfer to a food processor and process until smooth
  11. Divide the soup into serving bowls and sprinkle with fresh parsley if necessary
  12. Serve

NOTE:
Pay attention to which broth you use. After doing a search in the shops, we found that Knorr's Fond du Chef Vegetable Broth is the safest choice.
