- Grease the bottom of a large saucepan with butter
- Add broccoli and sprinkle with salt
- Mix broth and bring to the boil
- Reduce heat to medium-low and cook until you can stick a fork in the broccoli
- Now pour in a cup of water and let it boil again
- Add cheese, sour cream and sprinkle with pepper
- Boil for 2-3 minutes, stirring continuously.
- Finally, pour in the heavy cream (if desired) and bring it to a boil
- Remove from the heat and let it rest a bit
- Transfer to a food processor and process until smooth
- Divide the soup into serving bowls and sprinkle with fresh parsley if necessary
- Serve
NOTE:
Pay attention to which broth you use. After doing a search in the shops, we found that Knorr's Fond du Chef Vegetable Broth is the safest choice.
