Fry the cured ham in a hot pan with a little butter until crispy, and place it on a plate with a sheet of kitchen paper so that the butter drains off.
Divide the avocado in half. Carefully chop the knife into the avocado stone, turn the knife to the side and remove the stone. Be careful when doing this. If you do not feel completely safe using the knife, you can also remove the stone with a small spoon.
Take the avocado meat out of the peel with a spoon and put it in a small bowl together with the lemon juice. Using a hand mixer or food processor blend until it is a fine puree.
Whisk the egg whites in a clean and dry bowl until completely stiff. Carefully turn the egg white into the avocado puree and season with salt and pepper.
Put the cream in serving glasses, feel free to use a pastry bag for this job.
Put on crispy cured ham and drizzle over some good olive oil just before serving.
