Ingredients  

  1. Preheat the oven to 160C / 320F.
  2. Divide the tomatoes in half, peel the garlic and chop it in small pieces.
  3. Put a frying pan on medium heat, add olive oil, garlic and tomatoes.
  4. Fry the tomato mixture on low heat for 10 minutes. Put white wine in the pan and cook for one minute.
  5. Cut the basil, mix in the tomatoes along with lemon juice and lemon zest.
  6. Season with salt and pepper. Set aside.
  7. Divide the fish into four equal pieces, season with salt and pepper on both sides.
  8. Fry it in a frying pan with butter until it has a nice color on one side.
  9. Add the tomato sauce and cook for 3 minutes until the fish is cooked thoroughly.

Serve with good quality olive oil and bread.
