Ingredients  

  1. Use a standard handheld electric whisk.
  2. Start by separating the yolk and mixing the egg yolk, Dijon mustard and lemon juice. Important; all ingredients must be at room temperature.
  3. Add the oil in a small stream while whisking vigorously. It is important to be patient so that your mayonnaise does not separate!
  4. The mayonnaise is ready when it has thickened and all the oil has been mixed in.
  5. Finally taste with a little salt.
