Ingredients  

  1. Rinse the vegetables in cold running water in a colander. Set aside.
  2. Take a little butter in a pan and heat over medium-high heat.
  3. Add chopped leeks, crushed garlic and chopped onion. Stir for 3-4 minutes and then add the spinach.
  4. Stir well and continue to cook for a few minutes or until cooked.
  5. Sprinkle with a little salt and add a few drops of freshly squeezed lemon juice if necessary.
  6. Remove from the heat and stir in the cheese.
  7. Let it rest, covered for about 5 minutes before serving.
