Preheat the oven to 150C/300F.
Separate the egg white from the egg yolk, and whisk the egg whites stiff with a hand mixer.
In another bowl, whisk together the egg yolks, cream cheese, salt, and baking powder to a completely even mixture. If you want a more neutral taste on the pieces of bread, you can use natural cream cheese instead of spiced variants.
Carefully fold the egg yolk mixture into the stiff egg whites. It is important to be careful and make sure the "air" of the egg white is kept, as it leads to flat pieces of bread.
Cover a baking tray with baking sheet, and place small piles with the "dough" on the tray. This recipe makes about six pieces of bread the size of a burger bread.
Put in the middle of the oven for 25-30 minutes, or until golden.
Remove the tray and allow the bread to cool on the tray. They will sink a little during the cooling.
When ready, they have a fluffy and nice texture.
Put toppings on the flat side when serving.
This bread works perfecly as burger bread.
