Ingredients  

  1. Slice the zucchini into small cubes and cook for 5 min
  2. Then cool it in cold water using a strainer
  3. Chop the onion into small cubes. The finer the better. 
  4. Then mix all the ingredients together and not least taste to find the perfect flavor. The dijon is optional, but I find it adds that final touch. 
  5. Serve with some fresh chives or spring onions if you have them available.
I prefer Hellmann's mayonnaise when making this. You can also add a touch of natural yogurt for a rounder taste.
