Ingredients  

  1. Cut mushrooms into boats and peel and cut all the vegetables into approximately equal pieces.
  2. Fry mushrooms on high heat in a frying pan with butter until they get a nice color.
  3. Add the rest of the vegetables and continue to fry while stirring evenly until all the vegetables are soft and have a nice color. Season with salt and pepper.
  4. Put butter in a medium-hot frying pan. When the butter is hot, break one egg at a time, and slide each egg carefully into the frying pan so that the plum is not damaged.
  5. Lower the heat and fry the eggs until the whites have hardened and the plum is still soft.
  6. Serve on a dish with a generous amount of chopped parsley and place an egg on top.
