Ingredients  

  1. Clean and wash the cauliflower and divide it into evenly sized bouquets. The smaller the pieces, the faster the soup will finish.
  2. Save a handful of bouquets and cut them up into small pieces.
  3. Fry these small pieces of cauliflower in butter until crispy.
  4. Mix in the paprika powder at the end. Then set aside (to be used as a garnish when the soup is done).
  5. Meanwhile, boil the cauliflower bouquets in chicken broth or vegetable broth until soft.
  6. Mix in cream cheese, Dijon mustard and butter
  7. Then mash the soup with a hand mixer until you get the consistency you want. The longer you mix the more creamy the soup becomes.
  8. Season with salt and pepper.
  9. Then serve the soup in a bowl and garnish with bacon and cauliflower pieces.

If you do not have broth, you can use the same amount of lightly salted water.
