For this recipe, it is best to use a kitchen machine with a K beater.
- Preheat oven to 190C / 375F.
- Place baking paper in a springform. Set aside.
- In a large bowl, mix together almond flour, shredded coconut, baking powder, stevia and cocoa powder. Mix well and add eggs, one at a time, and whisk constantly.
- Then pour in melted coconut oil, almond milk and chocolate extract. With the K-beater on the kitchen machine, mix together at high speed.
- Then add the batter to the springform and bake for 20 minutes in the oven.
- Remove from oven and cool down to room temperature.
- Meanwhile, mix all the ingredients for the topping in a large bowl and whisk well until light and fluffy. Optionally add some vanilla powder.
- Pour mixture over the cooled down crust and cool overnight.
