Ingredients  

For this recipe, it is best to use a kitchen machine with a K beater.
  1. Preheat oven to 190C / 375F.
  2. Place baking paper in a springform. Set aside.
  3. In a large bowl, mix together almond flour, shredded coconut, baking powder, stevia and cocoa powder. Mix well and add eggs, one at a time, and whisk constantly.
  4. Then pour in melted coconut oil, almond milk and chocolate extract. With the K-beater on the kitchen machine, mix together at high speed.
  5. Then add the batter to the springform and bake for 20 minutes in the oven.
  6. Remove from oven and cool down to room temperature.
  7. Meanwhile, mix all the ingredients for the topping in a large bowl and whisk well until light and fluffy. Optionally add some vanilla powder.
  8. Pour mixture over the cooled down crust and cool overnight.
