Ingredients  

  1. Mix together avocado, cream, Greek yogurt and egg yolks in a food processor and mix until smooth. Then set aside.
  2. In a small saucepan, whisk together almond milk, vanilla powder, gelatin powder and Sukrin Gold (or another low-carb sweetener).
  3. Bring to a gentle boil and cook for 3-4 minutes, stirring constantly.
  4. Pour in the avocado mixture and stir well.
  5. Continue to cook for another 2-3 minutes, stirring constantly.
  6. If the mixture does not become thick enough, mix in another teaspoon of gelatin powder, but remember that the pudding becomes thicker when it cools.
  7. Then divide it into 4 serving bowls or glasses and cool down to room temperature.
  8. Refrigerate for at least an hour before serving.

    Denne oppskriften krever en del søtning og om en bruker Sukrin Gold så trenger man mer enn 3 ss. Kan hende det er bedre å bruke Stevia om man liker smaker så slipper man å bruke så veldig mye av det.
