Ingredients  

  1. Set the oven to 200 ° C.
  2. Cut the pollock into portions and clean the shrimp. Keep the shrimp shells.
  3. Place the pollock pieces in a greased, ovenproof dish.
  4. Cut carrot and shallot into small cubes, and fry it in butter until the onion is shiny.
  5. Stir in shrimp shells and tomato puree, and let it simmer for a few minutes.
  6. Add water and lemon juice, and let it boil until the liquid is reduced to half.
  7. Add heavy cream, thyme stalks and simmer the sauce under a lid for 15-20 minutes.
  8. Strain the sauce and squeeze as much liquid from the shrimp shells as possible.
  9. Season with salt and pepper.
  10. Pour the sauce over the pollock, cover with aluminum foil and bake in the oven for approx. 15 minutes.
  11. Take out the dish and add the shrimp the last minute of the cooking time.
  12. Serve with a green salad and, for example, low-carb bread.
  13. Feel free to sprinkle a little dill over if you have any.
