Ingredients  

  1. Coarsely chop the chili, garlic, spring onion, coriander, mint
  2. Mix it with oil in a food processor or with a hand mixer.

Salsa verde is a green herbal sauce that is found in many versions around the world.

In Italy it is based on parsley leaves, while in Mexico it is made from coriander, jalapeños and tomatillos.

All varieties are full of flavor, and are usually used as a dipping sauce for meat, fish, poultry or vegetables.
