Ingredients  

  1. Whisk together eggs and water.
  2. Pour the batter into a hot frying pan with butter. 
  3. Add grated cheese and fold one half over the other. Add the omelette onto the plate.
  4. Cut the tomato, remove the seeds and cut the tomato flesh into cubes.
  5. Cut the cucumber into cubes. Mix tomato and cucumber and pour over oil and vinegar.
  6. Season with salt and pepper, and mix in the basil.
  7. Serve the omelette with tomato salsa and alfalfa sprouts.
