Ingredients  

  1. Chop the garlic and red onion.
  2. Fry them on medium heat in a frying pan with butter, 2-3 minutes.
  3. Put the spinach in the pan and fry it.
  4. Whisk together eggs, salt and pepper.
  5. Put half of the tomatoes over the vegetables in the frying pan and pour over the egg mixture.
  6. Cook under medium heat for 10-15 minutes.
  7. Grate the parmesan over when the eggs are set. If necessary, place use a lid so that the cheese melts.
  8. Cut the frittata into pieces or into smaller pieces to serve as tapas.
