Ingredients  

  1. Preheat the oven to 225C / 440F.
  2. Divide the avocado in half,  and remove the stone.
  3. Using a spoon, remove some of the avocado meat from each half, enough to fit an egg in each hole. Feel free to eat what you take out. Yum!
  4. Put the avocados in a casserole dish. Make sure they are straight and stable, the easiest way to do this is to support them against the side of the dish and against each other.
  5. Crack the eggs and place them in the hole of the avocados. Season with salt and pepper.
  6. Put the dish in the oven and bake for approx. 15 minutes, until the egg whites have hardened but the egg yolks are still soft and "soft-boiled".
  7. Cut half of the ham into pieces.
  8. Sprinkle over pieces of ham and ground pepper. Serve with salad and extra ham.
  9. If the eggs become too large for the avocados, you can crack the egg in a bowl first, remove some of the egg white and then put the egg into the avocado.
