Ingredients  

  1. Start by cutting the eggplant into slices.
  2. Place the slices on a baking tray and sprinkle with salt. This will pull some of the liquid out and prevent them from getting chewy. Turn them after about 10 min and salt the other side.
  3. Meanwhile, you can cut the other vegetables. I split the squash in half and then cut them it in half slices. The bell pepper I slice in rings and the mushroom in suitable pieces.
  4. Fry the vegetables in butter and some herbs. They should be soft but not fried.
  5. Rinse the salt from the eggplant and divide them into four. Then fry in the pan.
  6. The ground beef is fried together with minced garlic, chilli and some herbs.
  7. Put all the vegetables in a casserole. Pour the fried ground beef over and slice the tomatoes into suitable boats. The tomatoes can also be put on whole if they are small.
  8. Shred the cheese and sprinkle over.
  9. Bake in the oven at 200C / 390F until the cheese has melted. Garnish with some fresh herbs if you have.
