- Mix butter, Sukrin syrup and vanilla powder with a hand mixer until creamy and soft.
- Chop the chocolate into small pieces and mix it with all the dry ingredients.
- Whisk the dry ingredients into the butter mixture, and mix everything well.
- Make small, flat blobs on a tray lined with a baking sheet. Keep some distance between them, as they will increase in size in the oven.
- Bake at 175C / 345F in the upper part of the oven for 8-10 min. The cookies should turn slightly golden in color. Cool them on the tray before placing them on a wire rack.
- Store in an airtight box to maintain the consistency.
The recipe can also be made using only one of the FiberSirup variants. Just be aware that the Gold variant will give an even sweeter taste to the cookies. Use approx. 190g (3/4 cup) syrup in total.
