  1. Divide the zucchini into thin slices. A mandolin cutter is useful.
  2. Place the slices over a paper towel for approx. 20 min. Then wipe off extra moisture.
  3. Put everything in a large bowl and mix with oil (1 teaspoon) and salt/pepper. A more gentle way is to do this is to put the slices on baking paper before roasting and sprinkle the salt and pepper here.
  4. With the zucchini on the baking paper, put it in the oven at 110C/230F for about 2.5 hours or until crispy. It is important that you cook them at a low temperature for a long time as this dehydrates the water in the squash.
