Ingredients  

  1. Preheat the oven to 180C / 350F
  2. Cut salmon into serving pieces, if not already in portions, and place in a casserole dish.
  3. Put soy sauce and olive oil over the salmon and season with a little salt and pepper.
  4. Top with grated lemon peel and lemon juice, and bake in the oven for approx. 10-12 minutes.
Salad:
  1. Cut spring onions into slices and chop up lettuce.
  2. Divide the avocado, and take out the stone and the meat with a spoon. Cut the meat into pieces.
  3. Mix spring onions, lettuce and avocado together.
Dressing:
  1. Stir together lemon juice, olive oil and sea salt, and mix into the salad.
